Salted Nut Roll Snack Mix


I have had this snack mix a hundred times this fall. Then, the one hundred first time I ate this salted nut roll snack mix, it finally dawned on me that I should share this yummy goodness with you.  Get ready.... this is a tough one to make (not).

Combine the following ingredients:
- Dry Roasted Peanuts
- Candy Corns
- M & M's (I just used two large, snack size bags you find in the check out line)

Mix it together and Ta-Da - Salted Nut Roll Snack Mix!

Texas Caviar Fresh Bean Salsa


This fresh bean salsa called Texas Caviar is de-lish!  My friend, Jill, shared this recipe with me when I was living in Cincinnati.  In fact, she first introduced it to me when we had a little Super Bowl Sunday party of our own the first year we were living there.  Honestly I hadn't made it since but as I was going through my recipes in search of something fresh and easy to bring to this year's Super Bowl party I found this recipe and said "This is it!"

Besides being super tasty, I love how pretty and fresh-looking it is with all of the colors!

Be prepared... it's really tough.  NOT!

Here is what you need:
1 can pinto beans
1 can black-eyed peas
1-2 cans white shoepeg corn
1 can black beans
1 small jar pimento
1 can diced green chiles
1 medium onion - chopped
1 green pepper - chopped
fresh cilantro - chopped

Drain and rinse everything that comes from a can and mix all of the above ingredients in a large bowl. 
Tip: You can find pretty much all of the beans and corn in the aisle with the canned goods.  
The pimentos are by the pickles in case you are like me and have never purchased them before and aren't exactly sure what they are. :)

Dressing:
1 C sugar
3/4 C cider vinegar
1/2 C oil
1 tsp salt
1/2 tsp pepper

Whisk all of the ingredients in a small bowl then add the dressing to the bean mixture.  Cover and refrigerate overnight.  When ready to serve, pour off the extra liquid and serve with tortilla chips or crackers.


This recipe makes a lot so it's perfect for a large crowd.  You might also want to consider bringing some take-home containers... if there is any left!

Mexi-Corn Party Dip



Every once-in-awhile we like to treat ourselves to the deliciousness of this mexi-corn party dip - even if we aren't having a party!! :)  My dear friend, Sue, introduced me to this recipe and it soon became our favorite pre-dinner snack!  This is a totally healthy dip, no need to consume in moderation.  Kidding, it's really not that healthy but it is good for the spirit!



Step 1| Gather your ingredients: Mayo, mild cheddar, mexi-corn, sour cream, cayenne pepper, cumin

Step 2| Mix together the following:

1/2 c. mayo
1 c. sour cream
1 can mexi-corn
1 tsp cayenne pepper
1 tsp cumin

Step 3| Mix in 1 to 1 1/2 cups of mild cheddar shredded cheese.

Step 4| Serve it up with Fritos scoops!  You're gonna want the family-sized bag or you will run out of scoops before you run out of dip!

{Guest Post} Valentines Day Homemade Marshmallows!

Meet Alise...

Homemade Raspberry Marshmallows and Mexican Hot Chocolate

It's the middle of winter and if you're like me, you stare out the window during work dreaming about cuddling up on the couch with the biggest blanket you can find and a cup of hot cocoa. Actually, I thankfully don't sit at my desk all that often – but when I do, you know what I'm doing.

I've joined the craze of spending pointless hours on Pinterest. The good thing about it – is that I find awesome recipes without reading a single thing. I'm a 'learn by doing' or 'seeing' kind of person, so Pinterest (a website full of photos) has been great for my recipe-finding binge. I came across homemade marshmallows one day and decided to check it out. I always see them in specialty shops, costing about $5.00 for 4 marshmallows. I wanted to know what the hype was all about. I hope you're not a sucker for spending that much on 4 marshmallows because guess what, they're really easy to make! Valentine's Day is coming up folks – don't delay!



The marshmallow recipe takes only 15 minutes to make, but needs to set for at least 4 hours. Feel free to make these a day or more in advance so that you have them on hand when you want them. The Mexican Hot Chocolate only takes a few minutes to heat up, so you and your honey will be cuddling in no time.

Homemade Raspberry Marshmallows

Adapted from Slashfood.com


0.75oz unflavored gelatin (3 envelopes of Knox gelatin)
½ cup cold water
2 cups granulated sugar
2/3 cup light corn syrup
¼ cup water
¼ teaspoon salt
½ tablespoon raspberry extract
½ tablespoon vanilla extract
6-8 drops neon pink food coloring, depending on desired color

Confectioners sugar
Cornstarch

Line a rimmed cookie sheet with plastic wrap and lightly oil it. Set aside.

In the bowl of an electric mixer, sprinkle gelatin over ½ cup cold water. Soak for about 10 minutes (or while you're preparing the next step).

Meanwhile, combine sugar, corn syrup and ¼ cup water in a small saucepan. Bring the mixture to a rapid boil and boil hard for 1 minute.

Pour the boiling syrup into soaked gelatin and turn on the mixer, using the whisk attachment, to high speed. Add the salt and beat for 12 minutes. After 12 minutes, add in the raspberry and vanilla extracts and food coloring. Beat to incorporate.

Scrape marshmallow into the prepared pan and spread evenly. Take another piece of lightly oild plastic wrap and press lightly on the top of the marshmallow creating a seal. Let mixture sit for a few hours, or overnight, until cold and firmly set.

In a shallow dish, combine equal parts cornstarch and confectioners' sugar. Remove marshmallow from pan and cut into equal pieces with scissors or cookie cutters.



Dredge each piece of marshmallow in confectioners' sugar mixture.


Store in an airtight container for up to 20 days.  Makes about 40 large marshmallows, depending on the size you choose to cut them.



Mexican Hot Chocolate
Adapted from Running to the Kitchen


2 cups whole milk
1 cup water
1 ounce dark chocolate chips
1 ounce dark chocolate cocoa
¼ teaspoon cinnamon
¼ teaspoon vanilla extract
1 Tablespoon sugar
1/8 teaspoon chili powder
pinch of salt

Combine all ingredients in a small sauce pan over medium high heat.

Stir to combine and heat until just before boiling.

Top with your homemade marshmallows!

Easy Christmas Treat!

I've done a little bit of holiday baking and when I say a little bit, I mean a little bit. :)  There are only two of us so it's not like we need a lot and Adam isn't big on sweets.  (Unfortunately I am, I get that from my dad.  Thanks dad!)  One of the Chirstmas treats I made is very easy so I thought I would pass it along to my readers. 

This Christmas goodness doesn't have a name but it is white almond bark covered pufforn with red sprinkles....

Notice that I just listed all of the ingredients when I told you what it was. :)  But if you are a "list" person, here you go: 
Ingrediants:

1 bag of Puffcorn
1/2 package of white almond bark
Holiday sprinkles

Instructions:
Melt the almond bark in a microwave safe bowl. 
Once the almond bark is completely melted, add the bag of puffcorn.
Mix until the puffcorn is evenly coated with almond bark.
Add sprinkles.


 Let it cool on wax paper before storing it.


I found an extra glass container I had around to store it in.  It looks pretty sitting on the counter! :)
(Wow the lighting is bad, huh?!  One day we will have a new kitchen!)


The mix of sweet and salty in this Christmas treat is so good!  I am not a fan of puffcorn by itself but a little almond bark fixes anything!

Two weeks ago I got an Outlook calendar notice about a "3rd floor holiday snack day" that is taking place next Monday at my office.  I think I will make it easy on myself and make this sweet treat to share!
